1. Steamed Mochi Ice Cream skin


①Open the boiler drain valve to discharge the waste water in the machine and then turn on the machine.


②Add 10kg of water and 6kg of maltose syrup to the steaming pot and stir well (about 1-2 minutes).


③Add Libang HL-20 modified starch 10kg; glutinous rice flour 10kg; Huang Ye monoglyceride 270g; dehydroacetic acid 54g; start stirring (about 2-4 minutes).


④Cover the cover and tighten the valve on the cover. Open the heating valve one, close the air release valve, and perform heating. The pressure is controlled at 0.025-0.03pa, and the heating time is 16 minutes.


⑤Close the heating valve 1, open the air release valve, and put it in the pot without pressure. Open the cover.


⑥ Add 20kg of dried fruit syrup and mix well, then sprinkle 30g of citric acid evenly, cover the machine, open the second heating valve, and close the air release valve. The pressure is controlled at 0.025-0.03pa and heated for 3 minutes.


⑦Close the heating valve 2, open the machine cover, add 20kg of dried fruit syrup, stir well, cover the machine cover, open the heating valve 2, control the pressure at 0.025-0.03pa, and heat for 3 minutes.


⑧Close the second heating valve, open the machine cover, add 20kg of fructose, stir well, cover the machine cover, open the second heating valve, control the pressure at 0.025-0.03pa, and heat for 3 minutes.

2. Cooling: Divide the Mochi Ice Cream skins into the cooling box, get on the cooling cart, and push it into the cooling room to cool to 20℃~30℃. 3.
