Mochi Ice Cream Production Steps

1.Hydroxypropyl distarch phosphateXanthan gum, Sodium hexametaphosphate , Monoacylglyceride, mix them together, it is the premixed flour.

 

2.Heating maltose syrup at 60-70℃ .

 

3. Pull out waste water in steam generator, then start steam generator

 

4. Add water to rice dough steamer, then add salt into water, add 1/5 (20%) maltose syrup ,fully mixed .

 

5. Add Glutinous rice flour and premixed flour to rice dough steamer , fully mixed (can not see the dry flour).  

 

6.Close the Rice dough steamer cover, start mixing and turn on steam connector,turn on the heating valve , turn off the vent valve, Pressure 0.03MPa -0.04MPa, steaming 15 minutes

 

7.After steam rice dough, turn off the heating valve , turn on the vent valve, until no pressure in the Rice dough steamer, then open cover of Rice dough steamer.

 

8. Add 1/5 (20%) maltose syrup, fully mixed, Close the Rice dough steamer cover, start mixing and turn on steam connector,turn on the heating valve , turn off the vent valve 0.03MPa,steaming 3minutes.

 

9.After steam rice dough, turn off the heating valve , turn on the vent valve, until no pressure in the Rice dough steamer, then open cover of Rice dough steamer.

 

10.Repeat step 8 and step 9 until Maltose syrup is finished.

 

11.After steam rice dough, turn off the heating valve , turn on the vent valve, until no pressure in the Rice dough steamer, then open cover of Rice dough steamer.

 

12. Add corn oil and Vanilla , fully mixed,Brush oil in the plate, then pull out mochi dough into plate.
