The YC-200 Fully Automatic Mochi Ice Cream Production Line, carefully developed and manufactured by Shanghai Yucheng Machinery Co., Ltd., is a new launched food processing equipment . The production line integrates the three machine: YC-166 Automatic Encrusting machine, YC-135 Steam generator ,YC-136 Steaming and refining machine, realizing the fully automated production process from mochi dough making to mochi ice cream stuffing, coating and plating, greatly improving production efficiency and product quality, and meeting the needs of modern food industry for automated and standardized production.
Machine Workflow
1. Mochi dough making
YC-135 steam generator and YC-136 steaming and refining machine work together.
Raw material preparation: Selected glutinous rice flour, purified water, high-quality syrup and other auxiliary raw materials are accurately weighed in proportion and ready.
Steam supply: The YC-135 steam generator starts to provide a stable and continuous steam source for the YC-136 steamer to ensure the smooth steaming process.
Mixed steaming: Pour the raw materials into the YC-136 steamer, and the equipment automatically starts the stirring and heating program. Through the precise control of the stirring speed and steam temperature, the raw materials are fully mixed and evenly heated in the machine, and gradually transformed into a mochi dough with a chewy texture and rich flavor.
2. Mochi ice cream forming, powder coating, and plate aligning
Raw material loading: Put the steamed mochi dough into the left hopper of the YC-166 Automatic Encrusting Machine, and at the same time load the ice cream filling into the right hopper.Automatic filling: YC-166 Automatic Encrusting Machine will start producing mochi dough accurately wraps the ice cream filling to form a round and plump mochi ice cream semi-finished product.
Automatic powder coating: In order to improve the appearance and taste of the product, the YC-166 Automatic Encrusting Machine is also equipped with an automatic powder coating function. The equipment will evenly sprinkle special powder on the bottom and top of the mochi ice cream, which is both beautiful and practical.
Tray Aligning: The finished mochi ice cream is then automatically transported to the preset plastic tray, neatly, compactly and orderly, which is convenient for subsequent packaging and storage.
3. Quick freezing and Shaping
Subsequent processing: The plastic tray filled with mochi ice cream is quickly sent to the quick freezing cabinet or quick freezing production line for rapid freezing. Through low-temperature quick freezing technology, the freshness and taste of the product are effectively locked to ensure the final quality of the mochi ice cream.

Mochi Ice Cream Machine Production Steps
1.Hydroxypropyl distarch phosphate, Xanthan gum, Sodium hexametaphosphate , Monoacylglyceride, mix them together, it is the premixed flour.
2.Heating maltose syrup at 60-70℃ .
3. Pull out waste water in steam generator, then start steam generator
4. Add water to rice dough steamer, then add salt into water, add 1/5 (20%) maltose syrup ,fully mixed .
5. Add Glutinous rice flour and premixed flour to rice dough steamer , fully mixed (can not see the dry flour).
6.Close the Rice dough steamer cover, start mixing and turn on steam connector,turn on the heating valve , turn off the vent valve, Pressure 0.03MPa -0.04MPa, steaming 15 minutes
7.After steam rice dough, turn off the heating valve , turn on the vent valve, until no pressure in the Rice dough steamer, then open cover of Rice dough steamer.
8. Add 1/5 (20%) maltose syrup, fully mixed, Close the Rice dough steamer cover, start mixing and turn on steam connector,turn on the heating valve , turn off the vent valve 0.03MPa,steaming 3minutes.
9.After steam rice dough, turn off the heating valve , turn on the vent valve, until no pressure in the Rice dough steamer, then open cover of Rice dough steamer.
10.Repeat step 8 and step 9 until Maltose syrup is finished.
11.After steam rice dough, turn off the heating valve , turn on the vent valve, until no pressure in the Rice dough steamer, then open cover of Rice dough steamer.
12. Add corn oil and Vanilla , fully mixed,Brush oil in the plate, then pull out mochi dough into plate.

1.What mochi size range can do?
Usually, Mochi Ice Cream Machine can make Mochi ice cream with weight from 10g to 100g, usually the weight of Mochi Ice Cream in the market is 40g, if customers need, we can customize larger size.
2.If I have more than one Mochi size, will your Mochi Ice Cream Machine do it?
Our Mochi Ice Cream Machine has three standard molds, the size is 28mm, 36mm, 44mm. If the customer needs extra, we need to charge the cost price to customize the mold size. Most of our customers only have one Mochi size, a few of them have more than two sizes, because the MOCHI ICE CREAM needs to be frozen in a plastic tray, and the size of the plastic tray is fixed.
3.What is the crust and ice cream filling amount for your Mochi Ice Cream Machine?
The ratio of crust and ice cream filling is 10%:90% to 100%:0%.
4.What if my material is sticky or too hard? How to judge? Or materials are too sticky to shutters and conveyor belts, how do you change the hardness and viscosity?
We have over a decade of experience with Mochi Ice Cream Machines and we have tested thousands of our customers' materials. First, we can basically tell by looking at Mochi photos; second, we can tell by watching mixed videos of clients. It has to be a fresh mix, usually we ask customers to squeeze the mix by hand, so we can judge both hardness and viscosity at the same time. If it's a hard dough, it's hard to squeeze with your hands, and if it's a sticky mixture, it won't fall off your hands or your Conveyor Belt. Third, we ask our customers to send us their main material ration list, a detailed recipe will be preferred. Finally, if we still can't judge, we will ask customers to air-ship their material to us and we test in our factory.
5.Can Mochi Ice Cream Machine and Flour Coating be connected into a fully automatic line?
Yes, machines can be linked together one by one, each machine is separate for easy movement and control.
6.Can we just buy the Mochi Ice Cream Machine?
Customers can only buy the Mochi Ice Cream Encrusting Machine, but without the Flour Coating Machine, the customer has to hand flour each Mochi and then remove each Mochi by hand. This way wastes a lot of labor and time for the customer and it is not a cost-effective solution. In conclusion, we recommend customers to use the Flour Coating Machine together.
7.Do you have a bigger Machine?

9.Do you have spare parts for this Mochi Ice Cream Machine? How often to replace?
A set of spare parts will be sent with the Mochi Ice Cream Machine. Spare parts include maintenance boxes, seals, molds, etc. If the machine works for 8 hours a day, it needs to be replaced every three months. If it works for one hour a day, it needs to be replaced every six months or a year.
