1.Mochi Ice Cream Dough Production

The water softener will filtering the tap water and then supplying softened water to the YC - 135 Steam Generator. This generator then converts the water into high-quality steam, which is provided to the YC - 136 Mochi Dough Steamer.

Inside the YC - 136 Mochi Dough Steamer, glutinous rice flour, water, syrup, and other raw materials are added. Mochi Dough steamer is equipped with advanced heating and stirring mechanisms that ensures the ingredients are thoroughly mixed and heated,to create perfect mochi dough. The continuous stirring action helps to develop the mochi dough's elasticity and smoothness, enhancing its overall quality.

2.Mochi Ice Cream Forming&Flour Coating & Aligning into Trays

Once the mochi dough is prepared, it is transferred to the left hopper of the YC - 166 Encrusting Machine, while the ice cream is placed in the right hopper. The YC - 166 Encrusting Machine is designed to wrapping mochi dough with inside ice cream.  YC - 166 Encrusting Machine's advanced mechanism ensures that each piece of mochi ice cream with uniform shape and weight. Additionally, the front and rear dusting devices attached to the machine coat the mochi ice cream with a layer of powder, it makes mochi ice cream not sticky to plastic trays,  adding an extra touch of flavor and texture. Furthermore, the automatic tray arrangement system of the machine places the mochi ice cream into plastic trays directly, ensuring neat and organized packaging.

3.Quick-Freezing of Mochi Ice Cream

After the mochi ice cream is placed in the plastic trays, they are taken to the  -36℃ quick-freezing cabinet or the -36℃ quick-freezing line for rapid freezing. This step is essential to preserve the freshness, texture, and flavor of the mochi ice cream, ensuring that it meets the highest quality standards.

4.YC - 136 Mochi Dough Steamer

YC - 136 Mochi Dough Steamer is equipped with a stainless steel hexagonal rod as the stirring paddle, and there is a fixed paddle at the bottom of the barrel. During the stirring process, the interaction between the stirring paddle and the fixed paddle, along with the exchange of steam, causes shearing, extrusion, stretching, and heat transfer to the materials, effectively protecting the molecular structure of the dough.
